Ingredients

  • 8 oz rice noodles
  • 1 tbsp vegetable oil
  • 8 oz shrimp or chicken, diced
  • 2 cloves garlic, minced
  • 2 eggs, lightly beaten
  • 2 cups bean sprouts
  • 3 green onions, sliced
  • ¼ cup roasted peanuts, crushed
  • Lime wedges for serving
  • Fresh cilantro for garnish

Pad Thai Sauce

  • 3 tbsp tamarind paste
  • 2 tbsp fish sauce
  • 1 tbsp soy sauce
  • 1 tbsp brown sugar
  • 1 tsp chili flakes (optional)

Method

1. Prepare the Noodles

Soak rice noodles according to package instructions until tender. Drain and set aside.

2. Make the Sauce

Whisk tamarind paste, fish sauce, soy sauce, brown sugar, and chili flakes in a small bowl.

3. Stir-Fry

Heat oil in a large skillet or wok over medium-high heat. Cook shrimp or chicken for 3 to 4 minutes. Add garlic and sauté for 30 seconds.

4. Finish the Dish

Push ingredients to one side. Add eggs and scramble until set. Stir in noodles and sauce. Toss for 2 minutes. Fold in bean sprouts and green onions. Serve topped with peanuts, cilantro, and fresh lime.
