Lemon Herb Roasted White Fish & Root Vegetable Dinner

This one-pan approach makes for easy cleanup while ensuring the fish soaks up the savory juices from the vegetables as they roast.

Ingredients

For the Fish & Herb Butter:

  • 2 lbs flaky white fish fillets (Cod, Halibut, Salmon or Sea Bass work best)
  • 1/2 cup unsalted butter, melted
  • 1/4 cup extra virgin olive oil
  • 4 cloves garlic, minced
  • 1 Tbsp fresh lemon zest (from about 1 large lemon)
  • 3 Tbsp fresh lemon juice
  • 2 Tbsp fresh parsley, finely chopped
  • 1 Tbsp fresh dill, finely chopped
  • 1 tsp dried oregano
  • Salt and freshly cracked black pepper, to taste

For the Roasted Vegetables:

  • 1 lb baby red potatoes, halved (or quartered if large)
  • 2 large carrots, peeled and cut into 1-inch chunks
  • 2 parsnips, peeled and cut into 1-inch chunks (optional, for added sweetness)
  • 1 large head of broccoli, cut into florets
  • 2 Tbsp olive oil
  • 1 tsp dried thyme
  • Salt and freshly cracked black pepper, to taste

For Serving:

  • Fresh lemon wedges
  • Extra fresh parsley

Instructions

1. Preheat and Prep Veggies:

Preheat your oven to 400°F (200°C). On a large rimmed baking sheet, toss the halved potatoes, carrots, and parsnips with 1 Tbsp of olive oil, thyme, salt, and pepper. Spread them in a single layer.

2. Initial Roast:

Roast the root vegetables for 15-20 minutes, or until they begin to get tender and lightly browned at the edges.

3. Prepare the Herb Butter & Broccoli:

While the root vegetables are roasting, in a small bowl, whisk together the melted butter, olive oil, minced garlic, lemon zest, lemon juice, parsley, dill, oregano, salt, and pepper. Set aside. In a separate bowl, toss the broccoli florets with the remaining 1 Tbsp of olive oil, salt, and pepper.

4. Add Broccoli & Fish:

Remove the baking sheet from the oven. Push the roasted root vegetables to one side of the pan. Place the white fish fillets in the center of the pan and arrange the broccoli florets on the other side.

5. Glaze and Final Roast:

Generously brush the lemon-herb butter mixture over the fish fillets, ensuring they are well-coated. Return the baking sheet to the oven and roast for an additional 10-15 minutes, or until the fish is opaque and flakes easily with a fork, and the broccoli is tender-crisp. (Cooking time will vary based on the thickness of your fish).

6. Serve:

If you prefer a more golden top on the fish, turn the oven to broil for the last 1-2 minutes of cooking, watching carefully so it doesn’t burn. Squeeze fresh lemon juice over the entire dish and garnish with extra chopped parsley before serving directly from the pan.

  • Bread: A crusty baguette or focaccia is ideal for soaking up the flavorful pan juices.
