Steps

Prepare the Roast
Remove the prime rib from the refrigerator 2 hours before cooking. Pat dry thoroughly with paper towels. Combine: Butter Olive oil Garlic Rosemary Thyme Parsley Salt Pepper Rub the mixture generously over the entire roast.

Roast
Preheat oven to 450°F. Place roast fat-side up on a roasting rack. Roast for 20 minutes to develop a beautiful crust. Reduce temperature to 325°F. Continue roasting until internal temperature reaches: 120°F = Rare 125°F = Medium Rare 135°F = Medium For most guests, remove at 125°F.

Transfer roast to a carving board. Tent loosely with foil. Rest for 30-40 minutes before slicing.

Cabernet Au Jus
In a saucepan: Melt butter and sauté shallots until translucent. Add Cabernet Sauvignon and herbs. Reduce by half. Add beef stock. Simmer 20 minutes. Strain and serve warm alongside the roast.
