Golden Strawberry Champagne Jewel

A crystal-clear sphere filled with strawberry-champagne compote and finished with edible gold, designed to burst delicately on the palate.

Four steps

Create the Jewel

  1. Make the filling

    Combine strawberries, sugar, champagne and lemon juice in a small saucepan. Cook over medium heat for 5 minutes, stirring occasionally, until the berries soften. Cool completely.

  2. Create the clear shell

    Prepare the clear gelatin according to package directions. Pour a thin layer into each cavity of a sphere mold and chill for 10 minutes, until just set. Add 1 teaspoon of strawberry filling to the center.

  3. Seal and chill

    Cover the filling with more clear gelatin. Refrigerate for 30 minutes, or until fully firm. Carefully release each sphere from the mold.

  4. Garnish and serve

    Place each jewel on a porcelain tasting spoon. Add delicate flakes of edible gold and serve chilled with champagne or sparkling grape juice.

Queen’s Chef Tip

Serve each sphere in one bite so the delicate shell releases its filling at once. For another variation, use raspberry rosé gel, peach Bellini purée, lychee and rose, or mango-passion fruit coulis.
