Southern Collard Greens with Smoked Turkey & Rich Turkey Broth

Ingredients

For the Greens

  • 2 large bunches collard greens, washed and chopped
  • 1 smoked turkey leg, wing, or drumstick
  • 6 cups turkey broth
  • 1 medium sweet onion, diced
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • ½ teaspoon crushed red pepper flakes (optional)
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon brown sugar
  • Salt and black pepper to taste

Garnish

  • Cracked black pepper
  • A splash of pepper vinegar
  • Chopped green onions (optional)

Instructions

Step 1: Build the Flavor Base

In a large stockpot or Dutch oven, heat olive oil over medium heat. Add diced onions and cook until softened and translucent, about 5 minutes. Stir in garlic and cook for 1 minute more.

Step 2: Simmer the Smoked Turkey

Add the smoked turkey to the pot and pour in the turkey broth. Stir in smoked paprika and red pepper flakes. Bring to a gentle boil, then reduce heat and simmer for 30 minutes to allow the turkey flavor to infuse the broth.

Step 3: Add the Greens

Gradually add the collard greens, stirring as they wilt down. Add the brown sugar and apple cider vinegar.

Step 4: Slow Cook

Cover partially and simmer for 1½ to 2 hours, stirring occasionally, until the greens are tender and flavorful.

Step 5: Finish the Dish

Remove the smoked turkey, shred the meat, and discard any skin, bones, and cartilage. Return the turkey meat to the pot.

Taste and adjust seasoning with salt and black pepper.
