Instructions

  1. Combine olive oil, citrus juices, garlic, and seasonings.
  2. Marinate fish for 30 minutes.
  3. Grill or sear over medium-high heat for 4-5 minutes per side.
  4. Finish with fresh lime wedges.

Smoky Jollof Rice

Ingredients

  • 2 cups long-grain rice
  • 1 red bell pepper
  • 3 tomatoes
  • 1 medium onion
  • 2 tbsp tomato paste
  • 3 cups chicken or vegetable stock
  • 1 tsp curry powder
  • 1 tsp thyme
  • 1 tsp smoked paprika
  • 1 scotch bonnet pepper (optional)
  • Salt to taste

Instructions

  1. Blend tomatoes, pepper, and half the onion.
  2. Sauté remaining onion in oil.
  3. Add tomato paste and cook until slightly caramelized.
  4. Stir in blended mixture and simmer 10 minutes.
  5. Add spices and stock.
  6. Add washed rice.
  7. Cover and cook until rice is fluffy and tender.

Honey-Roasted Sweet Potatoes

Ingredients

  • 2 large sweet potatoes, cubed
  • 2 tbsp olive oil
  • 1 tbsp honey
  • ½ tsp cinnamon
  • Salt and pepper

Instructions

Toss ingredients together and roast at 400°F for 25-30 minutes.


Glazed Baby Carrots

Ingredients

  • 1 bunch baby carrots
  • 1 tbsp butter
  • 1 tsp honey
  • Fresh parsley

Roast until tender and lightly caramelized.


Garlic Green Beans

Ingredients

  • 2 cups fresh green beans
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • Salt and pepper

Sauté for 5-6 minutes until crisp-tender.


Braised Cabbage Hearts

Ingredients

  • 2 cabbage wedges
  • 1 tbsp olive oil
  • ½ cup stock
  • Thyme
  • Salt and pepper

Roast and braise until fork tender.


Chef’s Plating

Using a large decorative platter:

  1. Mound Jollof rice in the center.
  2. Place grilled fish fillets alongside the rice.
  3. Arrange sweet potatoes, carrots, cabbage, and green beans around the plate.
  4. Garnish with fresh parsley and lime wedges.
