Ingredients
For the Tofu
- 1 block extra-firm tofu, pressed and cubed
- 2 tbsp cornstarch
- 1 tbsp sesame oil
- ½ tsp sea salt
For the Teriyaki Sauce
- ½ cup Sesame Ginger Teriyaki Sauce
- 1 tbsp maple syrup
- 1 tbsp fresh grated ginger
- 1 tsp rice vinegar
For the Bowl
- 4 cups brown rice or jasmine rice
- 1 cup edamame
- 1 cup shredded purple cabbage
- 1 cup julienned carrots
- 1 avocado, sliced
- 1 cucumber, sliced
- Green onions for garnish
- Toasted sesame seeds
Instructions
Step 1: Prepare the Tofu
Pat tofu dry and cut into bite-sized cubes.
Toss with cornstarch, sea salt, and sesame oil.
Spread on a baking sheet and roast at 425°F for 25 minutes, turning halfway through, until golden and crispy.
Step 2: Prepare the Glaze
Combine Sesame Ginger Teriyaki Sauce, maple syrup, ginger, and rice vinegar.
Warm gently in a small saucepan.
Step 3: Coat the Tofu
Remove tofu from the oven and toss with the warm glaze until evenly coated and glossy.
Step 4: Assemble the Bowl
Fill each bowl with rice and arrange:
- Crispy glazed tofu
- Edamame
- Purple cabbage
- Carrots
- Cucumber
- Avocado
Garnish with green onions and sesame seeds.
